Ecco la ricetta :

Totaal brouwwater litri di acqua in totale : 19.21 liter

Maischdikte : litri per kg/grano 5.00 l/kilo

Maischwater acqua di mash : 15

Spoelwater sparge : 4.21 liter

Kooktijd bollitura : 90 minuten

Berekende kleur colore: 18 EBC (BrouwVisie)

Berekende bitterheid : amaro 37 EBU (Glenn Tinseth)

 

Moutstort--grani----------------------------------------------------------

Pilsmout 3 EBC 72.7 % 2000 Gram 3 EBC

Carapils (D) 9.1 % 250 Gram 60 EBC

Farro 18.2 % 500 Gram 4 EBC

1 litro di succo di mela ( aggiunto nello starter)

5 bustine di te’verde in infusione a fine bollitura

Il succo di tre limoni in fase di mash ( controllo ph finalizzato con acido lattico )

Hopstort---luppolo----------------------------------------------------------

Cascade 7.0 % 20 gram 90 min. 31 EBU

Cascade ( non avendo l’amarillo ) 4.0 % 20 gram 10 min. 6 EBU

 

Gist--Fermento---------------------------------------------------------------

Gistsoort : Safale US-05

Gist toegevoegd als : Giststarter starter

Volume : 2000 ml

Beluchtingstijd : 1 ora arieggiamento + 5 ore sull’agitatore

Temperatuur : 20°C

Gist voeding : Yeast supplemento

Hoeveelheid : 5 grammi

Maischschema naam: Algemeen Maischschema

Stap 1 : 60°C 45 min 5.00 l/kg

Stap 2 : 72°C 30 min 5.00 l/kg

Stap 3 : 78°C 10 min 5.00 l/kg

 

A me piace cosi'ma se te la trovi troppo agrumosa, metti 1 o 2 limoni e non tre. ( per la seconda cotta ).
